Weiterhin gelang es, in systematischen Untersuchungen an Brotkrustenfraktionen sowie an lebensmittelnahen Modellen das antioxidative Potential von chemisch definierten Melanoidinen zu bestimmen und erste Einblicke in die wirksamen Strukturelemente zu erhalten.
